The term garde manger was originally used to identify a storage area for preserved foods such as hams, sausages, and cheeses. Cold foods were prepared and arranged for banquets there as well. Over time, the term garde manger has evolved to mean more than just a storage area or larder. It also indicates the "station" in a professional kitchen responsible for preparing cold foods, the cooks and chefs who prepare these cold foods, as well as an area of specialization in professional culinary arts. Members of today’s garde manger share in a long culinary and social tradition, one which stretches back to well before the dawn of recorded history. About the Author
The Culinary Institute of America (CIA), hailed by Time magazine as "the nation's most influential training school for professional cooks," is the author of some of the most significant works for professionals and students.

The oldest culinary college in the United States, The CIA was founded with 50 students in 1946 by Frances Roth and Katharine Angell as the New Haven Restaurant Institute. In 1947, the college relocated to a 40-room estate near Yale University and changed its name to the Culinary Institute of Connecticut. The name was changed to The Culinary Institute of America in 1951 to reflect the college's national student population. In 1972, with a student body of 1,000, the college relocated to its present home, the former St. Andrew's-on-Hudson in Hyde Park, New York, originally a Jesuit seminary built at the turn of the century.

Today, more than 2,100 students representing every state and several foreign countries are enrolled in the college's bachelor's and associate degree programs in culinary arts and baking and pastry arts. In addition, more than 6,000 professionals each year enroll in continuing education courses and another 1,600 participate in programs for food enthusiasts.

This volume is fantastic. It is encouraging to see culinary professionalism displayed so everyone can see the bones of it. I am a chef and enjoy its purism and sense of direction. It is a great culinary tool for myself and my cooks. I am currently teaching a class in garde manger for which I have ordered this book as a text. This is a must for your collection.

Excellent reference and guide

Many of the readers have commented that this book is for professionals only. I happen to disagree with this opinion as there are no prerequisites required to understand the instruction given within. Having said this, if you are not even curious of understading the fundamentals of lets say for example, sausage making, there is no need to buy this book, you can find great sausage at the grocery store without the hassle of making it at home.

So this book, yes it is for professionals but also for anybody who wants to understand (and even apply)the nuts and bolts of the cold kitchen. Personally I think that understanding the method that is used to prepare something, gives one a greater appreciation of that something when it is offered to him/her.

So for all of you non-professionals, if you are simply curious, about how to make salad dressings, terrines, or bologna for that matter, this book is written in laymans terms and will be an interesting journey into the world of Garde Manger.

Encyclopedic Authority on Cold Food Prep and Service

One could compare this book, `Garde Manger' by the Culinary Institute of America to Martha Stewart's `Entertaining' like a comparison of Richard Feynman's Lectures on Physics to a popular history of 20th century physics. Unfortunately, that comparison does not hold up. The more appropriate comparison would be between a technical work on wood joinery to a glossy `This Old House' imprimatur book on cabinet making. The difference between the classroom and the home kitchen is simply not that large. One can even bend the simile around on itself to say that the laboratory in which new culinary thoughts arise is in the home kitchen and not in the teaching classrooms of the Culinary Institute of America.
All this playing with comparisons is simply meant to make the point that while this book is presented as a textbook by the most prestigious culinary training institution in the country, it's material is simply not that different from a book with more obviously commercial origins.
This book does have a lot of material you will not find in a Martha Stewart or Ina Garten or Paula Deen book. High on the list of interesting background information is the history of how the French Revolution may have been a major contributor to the rise of restaurants and the great strength and variety in French cuisine.
The real story here is cold food and how it is prepared and served in (French) restaurants. On this subject, this book is a delightful source of both recipes and Alton Brown / Shirley Corriher type background. Honestly, the true culinary counterpart to Feynman's lectures would be Harold McGee's oft quoted books on food science.
This CIA book gives a wealth of recipes for salad dressings and other cold sauces, cold salads, sandwiches, cured and smoked foods, sausage, forcemeats, cheese, hors d'oeuvres, appetizers, condiments, and basic recipes (spice mixes and the like). One thing that immediately endeared me to the book is its treatment of vinaigrettes, which easily outdoes even Martha Stewart's better than average treatment. This material is worth the price of admission. Another service it supplies, with the authority of a teaching institution, is to simplify some culinary terms. For example, it always bedeviled me to know the difference between, for example, a relish, a salsa, and a chutney. Turns out that they simply are three different words for the same basic preparation. Like `plains', `veldt', and `pampas', they are different words for the same thing reflecting three different ethnic sources.
The chapters on curing and sausage may interest fewer readers than most, but there is much you can get from these chapters even if you never make a sausage. I was particularly struck by the fact that government regulations require that pork used in sausage making be `certified'. That's a little fact that people like Emeril and even Alton leave out of their little how to shows on sausage making. As a great believer in serendipity, I believe you never can tell what inspiration you can get from unfamiliar material. Here lies the greatest value to this book. It tells you a lot of the things which more popular treatments of the same subject can easily overlook. This includes things like sanitation, shelf life, and equipment care. As an aging hippie whose fantasies were fueled by the `Whole Earth Catalogue', I find the chapter on cheeses to be worth a month's run of `Good Eats' shows.
One can say that this book is really meant for the restaurant professional, but I believe it has many uses for the home cook. The most important use is as a resource for making pantry items like prepared catsup, mustard, relish, crackers, spice mixes, salad dressings, and stocks which one may typically buy at the supermarket. If you put your mind to it, you will certainly attain a better tasting product. What may be more important is that you will also certainly attain a better tasting product with no laboratory chemical ingredients.
For the real foodie, this book is a treasure. It gives recipes for lots of things few other books take the trouble to cover. The danger to the newbie is that they may not see those points at which the book's coverage is not complete. One area is in the recipes for stocks. These recipes are `bare bones' instructions with none of the usual cautions and explanations given in some other books. If you are really serious about stock making, consult `Jeremiah Tower Cooks' or Judy Rodgers's `The Zuni Café Cookbook' or even the CIA's `New Professional Chef' text. One can excuse this somewhat since these are hot preparations in a book about cold food. I would have preferred a reference to a work that gave the subject a more complete coverage.
One irritating thing I find in some reviews is a complaint about something which is outside stated range of the book. This book is about cold food. Do not expect details on baking or hot cuisine. Any material on those matters should be taken as a convenience to the reader.
I was a bit surprised to find at least one typo in this textbook by a respected school, published by textbook specialist Wiley. I found no errors that will mislead the home cook.
The book has several features I consider essential in a textbook. One is an bibliography. Another is a list of sources. Another is a glossary of terms. Another, very important, is an index of recipes.
This book is excellent if you are building a culinary library or do a lot of entertaining or are especially fond of salads and sandwiches, or simply like to read about food. The only reservation an interested reader may have is the price. The $60 list price inhibited me for several months, but I believe the book is worth it if you do any entertaining or make any quick cold lunches in your kitchen. Highly recommended.

Here's an exceptional rarity: a large, sweeping art history text book so well-done it almost makes the reader wish she or he were back in school. It's rather amazing that it took so long for a book like Art Since 1900: Modernism, Antimodernism, and Postmodernism to exist: a balanced, seven hundred page historical tome written with multiple perspectives in mind. As any undergrad knows, H.W. Janson's ubiquitous History of Art was written as if art history were some sort of race to colonize ideas and imagery; you'll likely not miss Janson's fetish for pointing out who did what first. Penned by a nimble crew who all teach at Ivy League universities, Art Since 1900, which mirrors the development of psychoanalysis and the creation of a huge international art scene, is on a smaller scale a history of contemporary theory and the art world almost as much as it is the art itself. Attention is paid throughout to important exhibits and texts, pointing out the rippling effect throughout the art community of these mirrors and portals. The book is arranged so that there are one or two essays per year. In such a novel format, often undervalued movements are given as much respect as Cubism and Minimalism. There are entire chapters here on Fluxus, feminist art, the Assemblage movement, Lettrism, the Independent Group, Gutai, Kineticism, the Harlem Renaissance, Aktionism, earthworks, video art, and the aesthetics of ACT UP. As with any history, there are personalities whose works are emphasized over that of others; the scant attention given to Jean-Michel Basquiat, for instance, is a rather large question mark. This history, coming soon to a college survey class near you, is like the period of art it covers: as often obscure and frustrating as it is dazzling and insightful. The authors, four prominent art history professors, offer a work that is beyond reproach with regard to thoroughness and accuracy but, despite the rich pageant of ideas on parade, they rarely illuminate their subject with even the faintest spark of excitement. Art is presented as a series of problems (the problem of figuration, the problem of post-colonialism, the problem of history), as if the ideas behind art were interchangeable with art itself. Painter Paul Gauguin, for example, is dissected solely in terms of his ill-conceived notions of the primitive purity of non-Western cultures, which is a bit like judging a fine meal only by its cholesterol content. The book's rigorously academic prose often sounds like a debate the reader has happened into the middle of: e.g., "Any attempt to transform autonomy into a transhistorical, if not ontological precondition of aesthetic experience, however, is profoundly problematic." Despite these defects, the volume manages to be fast moving thanks to its snappy format-107 short chapters, each broken up by subheadings, illustrations and sidebars-and it cannot fail to impress through the sheer vigor and profusion of the ideas on display, from Cubism to Chris Burden. Indeed, the book is a kind of intellectual tilt-a-whirl, with no comforting H.W. Janson-style master narrative at its center. The authors leave their own authority in deconstructed shards in the first paragraph of the introduction, which invites readers to arrange the book's "puzzle pieces" according to individual need. It may be a lively ride to those already familiar with its terms, but to the uninitiated, this book will likely remain a series of broken conversations.

Art Since 1900 probably shouldn't be read by artists, younger ones at least. Here is where all your sincerity, all your peer support, all your sudden joy in thinking you've finally got it right this time, goes to die, splattered like meaningless bracken against the wall of Context, of History. Probably what's enraged so many people so much about this book is that its authors, scholars of 20th century art if there ever were any, aren't in the least afraid to make judgements, to call a bad idea a bad idea, to explore the limits of an artwork's relevance to the question: can art still matter? The criticisms of the book all seem to want to posit some grand democracy of artistic endeavor, or better still an anarchy, all the while ignoring the fact that we've already gone past the point of anarchy and moved into pure spectacle, which can only exist within the disavowal of history, and of judgement. Utopia's already here, but this book wants to mean more than that. Ultimately its message seems to be, simply: not making crap takes hard work. Read it and suffer.

Dividends are the benefits of owning a stock

Now most investors and money managers buy stocks with the hope of short-term appreciation. Few buy them with the intentions of receiving dividends. However, when an investor purchases a company's stock, he or she becomes a partial owner in the business. As a benefit of being an owner, an investor receives a part of the company's earnings in dividends.

This book teaches readers about dividends, their importance, what to look for in a dividend-paying stock, how dividends pay for the stock, and much more. The last chapter lists selected stocks with good dividend records. This book is an excellent introduction to dividend investing.

Dividends, the key to investing success..

This is a very good book, and simple to read for even novice investors. A note, the entire book deals only with US listed stocks, so, to buy any of the stocks listed here, you need a broker with access to US markets.

The book covers compounding of dividends, a very, very important subject. It also warns about selecting stocks with yields that are too high, and unlikely to be maintained, or stocks which have a high yield, but are cyclical.

This is a very good book, for anyone, who might be considering thier retirement investment strategy.

A word of warning: This book is not about returns of 2000% per annum. Dividends are dull and boring. But, they make a good basis for investment.

Excelent book for Beginners - Maybe One Major Mistake

As I said in the title, and many other reviewers have pointed out, this is an excelent book for beginners in the stock market. Even more if you're confused by the array of stocks to buy and techniques to select them.

Having said that, I must point out one major flaw that I think the authors have made when writing the book. In the first chapters they mention the total return that an investor would have received from SP500 in the 70s based in the index itself and with the dividends reinvested.

In my opinion, being the SP500 a total return index, i.e. one in which the reinvestment of dividends is included, the total return should be the same. Nonetheless the idea makes a point in showing the importance of dividend reinvestment policies.

Besides this minor mistake, the book is an excelent read and guide to the stock market.

About the Author
Rich and Robyn Wilkerson have been helping people who are in crisis since the 1970's. The Wilkersons and members of their church actively minister in hospitals, prisons, and high-crime areas. The results are amazing. When the couple came to Miami to minister as co-pastors of Trinity Church in the 1990's, the church consisted of about 250 people. Now attendance tops 4,000. The Wilkersons are also the founders of a large social service organization, the Peacemakers Family Center. Rich earned an MA in organizational leadership and is currently earning his doctorate at Southeastern University.

The Why and How of Servant Leadership

What qualities characterize extraordinary leaders, ones who make a decisive impact on the lives of their followers? Often, we turn to the rich, powerful, and famous to answer these questions, under the assumption that leadership requires prominence of that sort. But as Rich and Robyn Wilkerson point out in their new book, everyday people often make the most extraordinary leaders.

The Wilkersons copastor Trinity Church, a multicultural, Assemblies of God megachurch in Miami, Florida. They also cofounded the Peacemakers Family Center, an innovative, award-winning social service organization ministering to the urban poor. Inside Out is a book about “the why and how of servant leadership,” whose stories and principles are largely drawn from their work in pastoral ministry and social service.

In the book, the Wilkersons identity fifteen traits of servant leaders:

This Book will give you both: "A-Ha, moments" and a few "Uh-oh moments!"

I have worked for leaders who have been featured in Forbes and Fortune. I have been privileged to know entrepreneurs who have changed the landscape of industries. Leaders who were able to come in and change the trajectory of a company. Most of those leaders also transformed themselves into individuals who thought the success of a company was solely attributable to them. They fell into the trap of thinking that they were the secret ingredient to the growth or success of their team. It's easy to do when you have people telling you how smart, successful and unique that you are as a leader.
When Jim Collins wrote "Good to Great" and introduced us to the "Level 5" leader he laid out an opportunity for someone to take us on a journey of what it takes to go from "Level 4 to Level 5." Inside Out answers the question of what keeps some at "Level 4" while others breakthrough to level 5? "Inside Out" answers that question for us and walks us through a humorous and often emotional journey that is the road map of achieving the leap from "4 to 5."
On a personal note, chapter 12 was an eye opener for me. I bought this book shortly after losing my mother. More than being my mom; she was my encourager. No one was a bigger fan and when I was at my worst, she never gave up. She was the "shoulder" for me that Robyn eloquently describes in her story of Elon and Graham (aka G-Money). I miss my mom everyday and if she was here I would tell her how much her encouragement meant to me.

A "must have" resource for your life!

An excellent book for pastors and church laity who are desiring to further develop themselves or their congregation into better leaders. The unique way that Pastors Rich and Robyn model leadership through serving is thoughtfully depicted and articulated in "Inside Out." The stories and corresponding leadership insights throughout the book are easy to grasp and apply to your life. This makes "Inside Out" a compelling, yet accessible read for everybody from the seasoned saint to the newest of Jesus followers. A "must have" resource for your life!

Loved this book! A must-read.

This book is a treasure. It combines solid advice for a career in the arts (specifically painting, but in my observation it would apply to most of the arts today) with absolutely delightful, well-written memoir. He illustrates his advice for an aspiring artist with wonderful stories about growing up as a middle-class kid in the Washington DC of 1950s and 1960s, becoming an art school reject and hippie, and then having a successful career as a realist fine art painter.

What makes this book a must-read are the amazing set of experiences Mr. Folsom has had (from The Mayor, to DB and Mr. Blood, to Robert Rauschenberg and Walter Hopps) , and the beautiful writing.

Some passages in this book are so gorgeous I emailed quotes to myself to re-read without having to flip through the e-reader. But it's all superb.

Remove Everything That Is Not Fred

When Pope Julius II asked Michelangelo how he managed to sculpt his masterpiece, the David, he replied "I simply removed everything that is not David."

Fred Folsom's 'Artiste: How-Not-To-Guide For Creative People' does for nascent, budding, struggling, burned out or interested in a second opinion creatives what Michelangelo did to a really big hunk a' rock which became one of the most awe inspiring, dignified, powerful and just plain beautiful sculptures in the world.

'Artiste' provides the most practical, necessary and extremely useful suggestions, tips, insights, hind sights and just plain good, common sense which can make a life in the arts doable if not successful.
These are clearly laid out and humbly-yet-unequivocally easy to follow tips-of-the-trade by someone in the trenches; a working artist who is still doing the work as well as working the art world,and generously sharing experience which has landed him exhibitions in the finest galleries in the nation.

Included is commentary on what a life in the arts really is, not what it should be or might be based on 'Be An Artist!' mail order programs. 'Artiste' is based on Fred's experience with art teachers, with art aficionados and collectors, art dealers, gallery owners, etc. The stories aren't always pretty but they are all informative and moving and something many of us can relate to, particularly the parts about battling with and overcoming substance abuse, financial hardship in good times and bad, and what to do when the muse or inspiration strikes one day and packs up and leaves the next.

The humanity in the portraiture of Fred's work inspires, comforts and reassures me the way no other living artist's work does and none comes as close, for me, to my beloved Rembrandt's self-portraits.
For the sake of full disclosure, let it be known Fred Folsom has been a great and loyal friend, inspiration and mentor of mine for a long time and did much to inspire and inform my 30-plus years as a writer.
The foundation for this long run in the writing world was a rotten childhood which made me want to understand how things can get so screwed up and find a way to re-create, to restore some of the natural goodness and beauty of this life. My way started with drawing, progressed to classical music and transmutated itself into writing. The goal and commitment were always the same. Only the medium changed.

Many of the tools and strategies which enabled me to do this are laid out, without artifice or pretension, in 'Artiste.' An overflowing pallet of practical how-to in terms of making art is included but, more importantly for me, so are the basic survival skills and meditations on what being an 'artist' means and how maintaining a life as an artist might be achieved.

Fred never taught me how to become an artist. When I told him I am virtually unemployable and asked how I could make a living writing he said "You gotta' start paying your bills." That was news to me. 'The world expects me to write and pay my bills?!' What 'Artiste' will do for you and what Fred did for me was suggest-not order, demand or threaten-how to deal with life's little inconveniences, like bill paying, while you are painting, drawing, writing, singing about or otherwise attempting to describe what this life is. According to your artistic perspective. Anyone can teach you how to draw, how to paint, how to write, how to sing and dance with the best of them if you have whatever that mysterious thing is the best of them have. Artiste says a lot about how artists live. Individually. Not collectively or according to any arts program or prescription for immortality via the Internet.

Artiste is primarily a book by a visual artist for visual artists. But it is also a book for every creative spirit who needs some empirical, tried and true wisdom and experience about how to deal with people, with business people, with people in the arts who can make you happy and rich or sick and miserable, with paint and painters, with ups and downs, with creative wizards and stupid clowns, with the vicissitudes of life which can be more intense and life altering and certainly more common in the life of an artist than the life of an orthodontist or software engineer.

Fred attempted screenwriting prior to painting and, coincidently, or not, I wrote and sold a screenplay about Antonio Vivaldi which is slated for production next year, edited by Tariq Anwar the editor of 'The King's Speech' and stars Max Irons, Alfred Molina, Jacqueline Bisset, Neve Campbell and several other great actors. When I met Fred, I was battling a nine year controlled substance addiction in the mean streets of Washington, D.C., 'working' as a courier in a stolen vehicle which I drove into a wall of the Federal Reserve Building-where did all those armed secret service people come from??!!-could barely write my name and gave a new and cosmically tainted meaning to my designation in the USA, 'resident alien.'
This all started to turn around slowly but definitely soon after I met the author of this book. With 'outside' help, with faith and courage and more than a modicum of hard work and talent and putting into practice the practices and principles in 'Artiste.' When I removed everything, physically, emotionally , spiritually, which was preventing me from committing my life to my work. When I removed everything that is not Fred.
