It had something to do with potatoes a grand-uncle had eaten deacades earlier, how the man could remember them so well for so long, buried as they had been in the middle of an elegant meal. Ruhlman wanted to learn how to cook potatoes like that--like an art--and the CIA seemed the place to go. The fun part of this book is that we all get to go along for the ride without having to endure the trauma of cooking school.

Ruhlman enrolled in the prestigious and expensive Culinary Institute of America (CIA) to get both material for a book and a culinary education. However, the drive and commitment required from day one, the demand for speed and precision, the pressure and perfectionism of the job?all hilariously and touchingly told?immediately erase his writer's detachment. But the tale goes beyond Ruhlman's anecdotes; he describes the curriculum with objective detail, so the reader also learns how a chef makes a flawless stock (and repairs a flawed one at a moment's notice), organizes the cooking station, prepares gourmet meals for crowds, and attains excellence and recognition. The short chart at the end shows the course work for the CIA's associate degrees. Superior Journalistic Look at a Facinating Subject

This 1997 second book by journalist Michael Ruhlman is his first of several essays and collaborations in writing about the upper reaches of the American culinary scene. The most fascinating thing about the book is in learning with Ruhlman, as an outsider to the culinary profession, exactly how demanding a job in the culinary arts can be. What is taken as a matter of course by people like Daniel Boulud and Jaques Pepin comes as a surprise to outsider Ruhlman. The surprise is in the commitment to performance which chefs are expected to make to maintain a service to their customers.
The book is a reporting on Ruhlman's taking an abbreviated version of the full curriculum at the Culinary Institute of America (CIA), where only the President of the school and a few select senior instructors know of the author's real role at the school. This means that when the author did attend classes, he attended the full class, from start to finish, and was expected to perform as well as any other student. While the CIA has many of the appearances of a liberal arts college, it is much closer in practice to a trade school. One symptom of this is that the stocks produced by the basic kitchen skills classes are then used by other classes at the school and they are used by each of the four restaurants run by the school for students, faculty, and outside guests. In a sense, this is a mix of trade school and graduate school, where it is expected that no one will do work worthy of a grade less than a B-.
The epiphany that reveals how serious the culinary profession is about uninterrupted service comes early in the first year when the school is hit by a serious snowstorm and the author considers whether or not he should attempt the difficult trek into the school. The great revelation is that the school and the instructor of Ruhlman's class on that occasion did not expect it to be above and beyond the call of duty to make it to class, and they would have not thought twice about lowering Ruhlman's grade had he been a true, full time student.
When I left school, I was surprised at how much easier life at a job was compared to life in school. I am sure that had a lot to do with the fact that I entered a largely intellectual avocation where so much about how things are done and how long they will take can change from job to job and even lowly technicians are give some opening to contribute to setting target dates. Culinary trades are a much different kettle of fish, literally.
In a professional kitchen, the line cook is totally at the mercy of who happens to walk into the restaurant that day, and how many people walk into the restaurant that day, and at what time. The challenge is to prepare so well and exercise one's skills so often that making six or eight different dishes to perfection at a sauté station becomes second nature. Since it is the job of the CIA to teach you how to do that, the classes can be very demanding.
The first 30% of the book covers the introductory class on basic skills and the main character is the instructor of that class. The last 30% of the book covers time spent in two of the CIA's four practice restaurants. The middle of the book covers experiences in specialized classes for Garde Manger, baking, and other specialities. If you do not already know the serious difference between savory cooking and baking, the books chapter describing the baking class will clear this up in a big hurry.
I confess that I am very fond of this type of book. To me it represents a successful presentation of material that reality TV shows can never hope to achieve. The paradigm for this kind of writing is Tracy Kidder's book `The Soul of a New Machine', to which I would favorably compare this work. You should find it doubly interesting if, as I do, you have an interest in the how and why of the culinary arts and personalities.

What It Really Takes ...

One can probably forgive Michael Ruhlman for being a bit obsessive. This volume pairs with his `Soul of a Chef' to provide a veritable one-two punch of cook training voyeurism; he has covered this field with skill and obvious enthusiasm. Between the two books I doubt he leaves any stone unturned in describing the various joys and horrors of modern culinary indoctrination. I'll also give him visionary credit: this particular book dates from 1997 - a full nine years before Bill Buford published his abused-apprentice tome `Heat', whose success will do doubt spawn dozens of ridiculous imitations.

Anyone writing seriously about chef training now appears almost automatically indebted to Mr. Ruhlman. And no wonder: the premise here is almost too good for any aspiring chef. The author goes undercover posing as a student at the Culinary Institute of America (CIA)--arguably the best culinary training school in the country, if not the world. (Only the teachers and administrators know his true identity and purpose.) The book often reads like cleaned-up notes from his various adventures--and that's really where the attraction lies. If you find being a virtual student at CIA potentially attractive, I suspect you'll love `The Making of a Chef'; Ruhlman not only give you what it's like, he truly gives you how it feels.

A stark example clarifies the emotions involved: apparently the weather during our hero's winter semester at CIA was the worst in years: many feet of snow dumped regularly. (The campus is in the Hudson Valley in New York State). At one juncture Ruhlman ponders not coming in to class--he's expected for an important test--due to the weather. And one of his teachers--after quietly hearing his decision--lets him have it over the phone: "We're different," he said. "We get there. It's part of what makes us a chef." (I strongly suspect Ruhlman chose his title from this exchange.) I was quiet. "We like it that way. That's why this place (CIA) never shuts down. And we're teaching the students this." The author learns quickly from this airing-out: "This is a physical world. The food is either finished at six o'clock or it's not. ... It wasn't simply that excuses were not accepted here--excuses had no meaning at all." (Italics mine.)

The detail here is nothing short of astounding. The cast of characters at CIA--from stock specialists to obsessives on bread cultures--never disappoint because we see what makes them tick and why each believes the work he's doing--and teaching--is important. And by taking us into this world and showing us just how passionate the teachers and students are we--at least those of us who love good cooking--also see its importance. This is a hard world but everyone loves being there. I found the best part of the author's style--and he's no slouch in general--came from the colorful way he showed me where that love come from in each individual he encounters.

Still, `Making' is not perfect. Ruhlman sets out a strict curriculum format--plowing through each semester, each class in chronological order--and never varies, making for a few dull interludes and redundancies. It's not an awful setup, but some variation would have been welcome; the author clearly loves some aspects of his visit (grill station, bread-making) more than others.

Of course, ultimately Michael Ruhlman is not a chef or even a chef-in-training. He's a journalist, and no matter how immersed he becomes in CIA's world we never lose sight of his voyeurism. This perspective has a few downsides, e.g., any tension about failing or even displeasing a teacher has to be conveyed second-hand through his fellow student's experiences. But I found the detachment ultimately very successful. I didn't want to know what's it's like to be a CIA student in the sense of getting inside anyone's head. I wanted to know what rigors must be overcome by anyone to even begin the journey of becoming a top-line chef. And `The Making of a Chef' was a hugely instructive and entertaining guide.

En cinco ocasiones ha obtenido el Premio Nacional de la Crítica que se entrega en Cuba a los diez mejores libros publicados anualmente. Desde 1992 ostenta el grado académico de doctora en Ciencias Literarias. Actualmente es profesora de literatura en el Instituto Superior de Arte. Es Miembro de Número de la Academia Cubana de la Lengua y Miembro Correspondiente de la Real Academia de la Lengua Española. En 1995 le fueron otorgadas la Distinción por la Cultura Nacional y la Distinción por la Educación Cubana.

About the Author
Gary Heyward was born and raised in New York City’s Polo Ground Projects in Harlem. At the age of nineteen, he joined the United States Marines and became a decorated war veteran by serving in Desert Storm/Desert Shield Operation in 1990–1991. After receiving an honorable discharge he served as a New York City corrections officer, working ten years at Rikers Island. In May of 2006 Gary was arrested and convicted for selling drugs throughout the jail. During his incarceration he developed a passion for writing and penned his memoir, Corruption Officer. He was released in 2008 and currently works for the city of New York.

CHAPTER 1

THE G-SPOT

“HEAD CRACK!” the houseman yelled.

“Alright, nobody move!” he said, as he went around the table to collect the money from the bettors.

The game was C-low and at this time my man Fungler was at the top of his game again. It’s a Friday night, payday, and I have every dime in the bank (the bank is the guy who takes the money for bets) on Fungler. I gave him that name because that’s what he yells every time he shoots the dice. I’m his hype, motivating him when he shoots and antagonizing the other bettors around the table to bet against him. Whenever he’d win we both made money. Lately Fungler was on a roll.

Fungler and I would be on our bullshit as usual. When Fungler would get the dice he’d shuffle them, then shake them in his hand. I’d be beside him screaming, “Thrilla in the manila dilla!” He’d shake his head indicating “no.” Then I’d scream, “Feva in the Funkhouse!” He’d shake his head again indicating “no.” Then I’d scream, “Rumble in the Jungle.” Then Fungler would say, “Rumble in the jungle without the fungle kungle,” while simultaneously releasing the dice and watching them register. Every time we did this routine, we’d hear the houseman yell, “HEAD CRACK!”

People who had bet against him would put their heads down or have the shit-face (upset facial expressions). Then a cheerleader from the side would yell, “Double or nothing, I bet he can’t do it again!” A cheerleader is a person on the sidelines with no money, talking shit about somebody else’s money! Fungler gets the dice, but before we go into our routine, in walks Chuck.

Chuck’s money is long. He has a lot of it. Every time Chuck comes in, muthafuckas who are scared, and have the bank with a lot of money in it, normally pass it to the next bettor. They don’t want to take a chance of losing it all in one shot. Everybody knows Chuck will stop up your bank—putting a large amount of money down on a bet equal to or more than what you have.

Everybody knows the routine, but not Fungler. Fungler’s eyes lit up. He hollered at Chuck, “Get down, nigga. I know you ain’t come here to sightsee!” Fungler looked at me with a shit-eatin’ grin like, “I got this nigga!” I looked at him like, “Muthafucka, just pass the bank!” Then somebody on the side said, “Look at this STD (scared-to-death) ass nigga!” and everybody laughed.

Yes, scared ass nigga, a person who tries to gamble with the big dawgs but really has a low-paying security job, and has no business being at the gambling spot in Harlem, or anywhere else for that matter, ’cause he knows that he is living PTP (paycheck to paycheck). If he loses his money this payday Friday night, he will be like Sidney Poitier in A Raisin in the Sun when Willie runs off with all that money.

“Willie, don’t do it, Willie, not with that money, Willie!”

Yes, scared nigga. That would be me! Gary, Gee, Big Hey. It all depends on who is calling me. My momma calls me “Boy” or “Nutmo,” aka scared nigga!

So Chuck dropped his stack. And Fungler started talking shit, saying, “After this roll all you working niggas are going to be sick! You’re gonna throw up on your way to the ATM! I love taking a nine-to-five nigga’s money, but taking a hustler’s money is like winning ten thousand dollars on one of those scratch tickets. What is that?” Fungler asked the crowd.

“FREE MONEY!” everybody replied.

Everybody except me. I was busy trying to get this nigga’s attention to pass that muthafuckin’ bank! Fungler continued to shake the dice, ridiculing Chuck.

“Taking a hustler’s money is like going to Rent-A-Center, getting a whole bunch of shit delivered to your apartment, then moving to Brooklyn!”

Again, everybody laughed, except me. I was still in scared nigga mode!

“Getting his money is like going up in a bitch raw dog and not worrying about kids ’cause she got her tubes tied!” Fungler continued, and said, “What’s that?”

“FREE MONEY!!” They all laughed.

I’m over here figuratively sharting on myself, like when you think you have to fart but mistakenly shit on yourself instead. Chuck screamed out, “Nigga, would you stop walking the cat walk and just roll the muthafuckin’ dice!” Fungler shook them, then looked at me. Man, listen, the look I gave him was not a confident one. I did not even play with this nigga.

“Fungle in the rumble jungle kungle without the ungle dungle sungle?” I screamed out. Whatever the fuck that meant.

Fungler threw the dice. It seemed like it took an eternity as they flew past my face. At that moment all I could think about was my kids asking me for Michael Jordan sneakers, my past-due rent. Mom Dukes ain’t taking no shorts on rent. If I lose, how am I going to get to work next week? Willie, don’t do it!

The dice hit the wall and registered one-one-six! Fungler screamed, “HEAD CRACK!” I momentarily blacked out, then came back screaming, “NIIII-ZZIIIII-GAA!” After the house collected the money, totaling about sixty-six hundred dollars, I went over to Fungler and copped out, saying, “Yo, man, I gotta go.” So Fungler passed the bank. We split the dough. I tore the door off its hinges getting the fuck out of there.

Not a Pity-Party - Just the Real Deal

This is a very accurate book in terms of the daily-workings of large inner-city jails. I have a few close friends who are Riker's Island CO's, and the stories they tell me over the years are identical to those depicted by Heyward. This book is not "dumbed-down" as described by another review - rather, it's written in the dialect of many CO's and inmates. I also don't understand how anyone can be "confused" by the writing. Fine literature it is not; rather, it is a simply written story of one man's life/story. In addition to the casual reader, I recommend this book for those considering or entering corrections. Having visited clients on Riker's Island, I can personally attest that the "Island" is a world of its own. Heyward takes you directly into that world.

Gary Heyward's CORRUPTION OFFICER reminds us when faced with a choice to choose wisely

When it comes to looking at life and our choices and what can be the consequences of our actions, I think Gary Heyward's book CORRUPTION OFFICER is a great reminder for us all.

It takes us not just into the life and decisions he made, but what happened when the truth of his life was revealed and the abuse of authority that he had been entrusted became known. Gary takes us not just into his life as an officer trying to do his job but also the Gary that was looking after himself.

He talks about the way he treated those who loved him, the way he treated inmates and even the way he treated fellow officers. This is a book that lets us know that no matter who we are, what we wear or what title we have at the end of the day we are all accountable for our actions, and one day we will have to give account to what we have done.

When tables turn on Gary he better understands the importance of doing what is right. Now he can use his story to let others know the pitfalls of making bad choices and not allowing greed to blind us to doing what is right.

Definitely a book that speaks to the heart of everyone faced with good versus bad, Gary Heyward invites us to learn from his life and choose wisely.

A painfully honest memoir *

Corruption Officer is an excellent read of such a compelling tale. I read this book in 1 day, couldn't put the book down. Author Gary L. Heyward showed that anyone can make a mistake. He gives you insight into what happens behind the scenes in prison whereas in some situtations we would never even imagine. I recommend this book to all, but specifically to those needing encouragement on how to perservere through it all and rebuild a life after trying times.

About the Author
George Hunt Williamson, UFO contactee and author, is the pen name of Dr. Michel D.M. d'Obrenovic (1926-1986), a prominent Christian scholar, Eastern Orthodox bishop, and Grand Prior of the Knights of Malta. Anthropologist, archaeologist, explorer, and lecturer, he was a recognized authority on Mayan culture and history, and author of Secret of the Andes.

"Secret Places of the Lion," written by the same author George Hunt Willamson. People who really want to know the truth that has been kept from us for aeons of time, these books are a good place to start! That is if they keep an open mind and are ready for a greater spirtual awakening out of the sleep of the ages. The Alien influnces mentioned in this book are benificial. Much is not understood at this tme. Read quietly and let the wisdom sink in. I couldn`t put it down, It`s as if I was reliving every thing I was reading, very heartfelt..

Learn about the Christ souls called "The Goodly Company".

I read this book many years ago and really enjoyed it. So, I ordered several copies to give to my friends for Christmas. This book deals with reincarnation and tells about the "Goodly Company" who came to Earth in ancient times to help and teach humanity, and reincarnated time after time to continue their efforts.

This book is so interesting and informative. Answered questions that I have had for years. Put it all in place. A good book for people who know want to know why they are so interested in bringing the knowledge of the one GOD to the earth. Also, though one may feel different, we are not alone, and we never have been, life after life.
